Feeling Better

I'm officially 14.5 weeks now so I'm into the second trimester. I feel so much better! I was really nauseous (with a chance of throwing up), tired, and starving during the first trimester. Now I have energy, I'm not nauseous at all anymore (and there's no risk of throwing up), and when I get hungry I don't feel like I will die if I don't eat something in the next five minutes.

Everyone always asks if all I want to eat is pickles and ice cream. The irony is that I used to eat Bill's dills all the time, but last trimester I couldn't stomach them. I was panicking! None of Brett's Dad's pickles for a whole nine months? I already have to give up beer and wine and coffee...but no pickles??? Well, yay for the second trimester because I can eat pickles again! In terms of cravings, I haven't had any weird cravings yet. The main thing I'm craving now and have been craving for the last couple of weeks is Mexican food. If only I was in CA. *sigh* Karina's guacamole recipe has come to the rescue several times, as well as a refried beans recipe that I have modified from Hannah's. If you know any quick and easy Mexican food recipes, send them along or post them as a comment. :-)

I'm glad I'm feeling better. It makes it easier to do my homework and feel like a normal human being again.

Here's a Tex-Mex recipe that I've always found to be a winner:

Chicken Enchilada Casarole

Ingredients:

1 standard sized package of chicken from the grocery store, preferably white meat.

4 cans of Cambells Cream of Chicken or Cream of Mushroom soup, in any combination, e.g. 2 of each kind or whatever.

3 or 4 small cans of diced green chile.

1 package of large flour tortillas.

2 eight ounce packages of your favorate cheese. I like to get one of sharp chedder and one of pepper jack.

Instructions:

Boil chicken until it can be easilly removed from the bone and shredded. Debone and shred chicken and set aside. In a large bowl combine the cans soup and chile. DO NOT ADD ANY WATER OR MILK. You're using the cans of concentrated soup as a sauce, and not as soup. Into a second bowl, shred the cheeses. Line the bottom and sides of a large casarole dish with a layer of tortillas. Distribute 1/2 of the chicken over the layer of tortilla. Pour about 1/2 of the soup/chile mixture over the chicken, and then sprinkle 1/2 of the cheese over the sauce. Make another layer of tortilla, and repeat the process till the casarole dish is full. The top layer should consist of cheese. Bake at 375 for one hour, browning the cheese.

It's true that Sarina no longer thinks that she'll die of starvation within 5 minutes if she doesn't have food.

It's 15-30 minutes now.

If you have a Trader Joe's around, they sell Pollo and Carne Asada pre-made. All you have to do is slap it on the grill, with some tortillas... yummy yummy. :)

My roommate just got back from Texas. I asked her how she liked the authentic mexican food and she said she didn't like it as much as Chipotle and Qdoba. Needless to say, I couldn't bite my tongue before I said, "Oh! So you don't really like mexican food."

First of all - congratulations to you and baby to be!!! It is very exciting!!!!!!!!!!! Enjoy every day as your pregnancy progresses. My funny craving story is that when I was pregnant with Danny I developed a wicked sweet tooth. I would make a pans of bars or brownies. After eating 1 or 2 I would take the knife and just cut off a little more...then a little more. Before I knew it I would be walking around the house with the knife and frequenting the kitchen for a bit more until the pan was almost empty!

We had a friend who craved milk. When we would get together for dinner she would drink her milk out of a wine glass. She would have the jug of milk on the floor next to her chair and fill up her wine glass at least 4-5 times.

I heard the hearbeat and it sounds like a healthy baby!!! Enjoy!!!

Thanks for the recipe and tip! And yeah...that person doesn't like real Mexican food...

After I read Kari's post about brownies, I read a chapter in "Harry Potter and the Goblet of Fire." It was right after Harry beat the dragon and Fred and George went to the kitchens to get food to celebrate. They were talking about all these pastries...so I made a pan of brownies...and ate about half of it. My friend Beth helped! But I ate most of it. hehe yum!
